Healthy Pear Muffins

Perfect snack for the Paleo diet or anyone looking for a Gluten Free snack

This recipe works for: Breakfast | Snack

Serving Size: 32
Ingredients:
  • 4.5 cups almond meal
  • 2 ripe bananas, mashed
  • 1 14.5 oz can pear slices
  • 1/2 cup coconut oil
  • 1 tsp baking soda
  • 8 large eggs
  • 1/2 cup water

Directions:

  1. Blend all ingredients.
  2. Pour into muffin pans.
  3. Approximately 1/4 cup per muffin.
  4. Place in 350 degree oven for 20 or so minutes.
